The latest release of recorder, as one of the release notes, says it detects multiple Kinect 2's on the same machine:

"Detecting if several Kinect 2 sensors are connected to the same PC".

I *assume* this means that you could have more than one connected but still only use one at a time, since my understanding is there is no way the bandwidth is available for doing more than one on a single machine. Does anyone know if that's what it means?

Actually, this item is listed in notes for pretty old v3.1.3 released back in 2015. And you're right - it means that Recorder issues a warning when encounters such situation but doesn't allow to use multiple Kinect v2 sensors.
However, single Kinect v2 per PC limitation comes not from hardware but from Kinect SDK which Recorder employs for working with Kinects. And we're planning to add support for multiple Kinects v2 on a single PC using libfreenect2 library.

Woo! Awesome guys! I'm really looking forward to trying this out. Now that I have two modern 'workstation' level computers at my disposal, maybe I can finally attempt that quad Kinect 2 setup I've been dreaming about. :)

I just saw the update for dual kinect v2 support for one machine has been added using libfreenect2. libfreenect2 in the past supported using the kinect v2 on windows 7 machines, does this mean that we can use the recorder on windows 7 as well in conjunction with the kinect?

They claim that support on Windows 7 is buggy, so we did not even test it and set Win 8+ requirement for this camera type.

Congrats on releasing the latest Recorder with multi-Kinect support!

I installed it on my laptop workstation this morning and will test it this evening. If there's time tonight, I'll install it on my desktop workstation, and test the two systems together.
