I have a 1 tb hdd, i7 3770k, and a radeon 7870. I was wondering if this was enough for 6 ps3 eye cameras at 60 fps and 640x480?

CPU is adequate, GPU has no value for recording. Regarding HDD - it depends... As you have powerful enough CPU, you may try to use the background subtraction compression or JPEG at high quality levels (at least 80) to decrease recording bandwidth. If you experience frame drops while using compression, then you should consider buying an SSD. Another option employed by some users is recording to a RAM drive.
