Hmm. To me it sounds like DMC should be working fine on your system. Hopefully somebody from iPi will jump in with more ideas.
The one possible bottleneck I see is your capture drive; a SATA 7200 drive is fine for a single Kinect but I'm not sure if it can handle two streams of Kinect data simultaneously. Remember that Kinect data is heavier than standard video since it includes both depth and RBG video data. Have you tried disabling the RGB streams?
Alternatively, you could try an SSD or RAID. I use
this SSD made by Corsair which I have dedicated for iPi Recorder capture and it works flawlessly for dual Kinect and mutiple PS3 cameras. This model has been long discontinued but I imagine newer models are cheaper and more efficient.
FWIW, you really should not have to shut down any items in task manager...for me, it's been literally plug-and-play and I'm not running with an especially lean or clean system so, apart from the capture drive, I'm not sure what could be going on there.
