When I adjust the body size of the actor, if I have to err, is better to make the actor more thin or more fat (skin in relation to depth) ?

Just try to tweak it as close as possible. I do not think there is actually a big difference whether to set the model bolder or thinner. Personally, I'd prefer a thinner way, so the body parts are more distinct.
