Yes, you can use the user guide for a single depth sensor as a starting point.
User guide for iPi Recorder describes functions of the recording program in details, and there is no such guide for v3 yet. We hope it is pretty easy to use actually.
In spite of reworked UI, the main workflow remains the same as in v2:

• select devices to use
• adjust settings
• evaluate background
• record video
• open video in Mocap Studio

Thanks for pointing out this long-lived breach in our docs. I'm sure we'll fill it with some content in the near time :)
