Setup with 1 Kinect is the easiest to use and can capture many motions but not very complex (there are usually problems with full rotations, for instance). Also, it only requires the most affordable of our licenses - Express.
For color cameras (PS Eye), 3 is the very minimum. We recommend at least 4 for reliable capture. They can capture most kinds of motions, provide larger capture area. However, more expensive Basic license is required, and there are more requirements to environment and clothing.
Here are mor details about differences between depth and color capture
http://docs.ipisoft.com/Multiple_Depth_Sensors_vs_Sony_PS_Eye_ComparisonRegarding USB, it's hard to say what it's capable of on your PC until actually trying. Kinect has specific requirements to PC and does not work good with some USB controllers. For PS Eyes you'll need an USB 2.0/3.0 port for each camera. You can extend the number of ports by using an USB splitter if necessary.
Probably I'll be able something more definite about capability of USB in your laptop if you post a screenshot of Device Manager with USB devices.
