I record Kinect data with a laptop. I think data from a single Kinect is smaller than data from multiple PSP Eye cameras, but it still requires a bit of bandwidth. The laptop I use for this is pretty old but I think the main thing is to record directly to a very fast drive.
What I use is an eSATA Expresscard and a small eSATA RAID I assembled a few years go. This works fine for me but if you have a newer laptop and you run into dropped frames, you might consider adding an internal SSD or if you can add an Expresscard you could use an external SSD, USB 3.0 or eSATA GB drive to record to.
I read some time ago that it's possible to use a single SSD for your OS, programs, and Recorder data, but this may require a larger SSD which might get expensive. I haven't checked on this recently, so make sure you research more current info before buying.
