I believe it's a resolution issue. the Kinect's resolution is somewhat low, which makes the random noise that appears from frame to frame even more apparent. I don't think you can do much about this, but FWIW, you will seen some jitter even in the 'raw' tracking pass from multiple PS3 Eye cameras, just not as much as with Kinect.
That said, iPi Studio's Configurable Jitter Removal system works very well in eliminating the jitters while preserving the integrity of the original performance. Just be careful not to use too much; this can cause motions to look 'robotic'. (Which is fine if that's what you want of course.)
