The heights don't need to be so specific; the heights you use should depend on the motions you're capturing. In a nutshell, the camera heights are staggered to improve coverage, and some motions benefit from different coverage angles.
Also, staggering the camera heights makes it easier for iPi Mocap Studio to identify each one when calibrating the scene. So it's NOT a good idea to use the same heights for multiple cameras.
When positioning the cameras, go for the best visual coverage of the action you're trying to record. The example vmaslov gave is a good one: if the performer is lying down on the floor, then having the camera higher up allows them to see more of the the motion than if they were all at eye level or lower. If the performer is mainly standing, then favoring eye level positions is better. You still want to stagger the heights though and make the positions obviously different for scene calibration.
That said, this does not mean you should move the cameras for every capture. Try to plan your motions so similar performances can be recorded together. Then, when there is a drastic change, decide if you need to move the cameras and re-calibrate the scene.
Because of this, I don't recommend mounting the cameras in permanent room locations. It's more flexible to use tripods and other move-able camera mounts.
